Every fish is chilled and bled at the point of landing, then quickly delivered nearby for processing. Processing involves the heading, gutting of each fish down to a whole-side or fillet that is then trimmed. The pin-bones are then removed and the skin is left on. Finally, each fillet is vacuum-sealed, flash-frozen and placed within an eco-friendly package liner also containing an adequate amount of dry-ice to ensure that your order arrives frozen.
